Is there any way to edit the anims from OFP and make the cargo people on cars be able to shoot rifles out windows instead of having just a gunner?  :-\

Nope, one gunner per vehicle is an engine limitation... I suppose you could config one seat in the car or jeep to be a gunner position, though.
