where are the sound files for weapon shots etc in the arma folder?

It is more than likely that you will find them all in:

\ca\Weapons\Data\Sound\

 can sounds conlict with each other or does if one sound is running and another comes up, will both sounds run together?

 sounds can run contemporarily. I've never experienced problems with that.
